Quinoa risotto

Quinoa is a (pseudo)grain that has a fluffy texture when cooked, making it a good alternative to brown rice or couscous. Given its high calcium content, it is useful for vegans and for those who suffer from lactose intolerance. Quinoa can be used to prepare risottos, as for example in the dish pictured above: with Parmesan cheese, arugula, and cherry tomato.

  1. When I was on a wheat-free diet, I bought some Quinoa. Have I cooked it yet? No! Geez, I guess I should. It looks very healthy, especially with the shaven parmesan cheese on top.
