Empanada

Valencia

Empanadas are stuffed pastries very popular in the Iberian Peninsula. They are prepared by folding dough around a filling, e.g. cheese and grilled vegetables. Indeed, the Spanish verb empanar means “to cover in a pastry case”. I recently had a delish empanada stuffed with bell peppers and onions in Valencia (pictured above).

  1. Empanadas –very popular in Latin America too– can be fried or baked and filled with an endless variety if fillings. My favorite childhood memories are of fried Mexican empanadas with ground beef:-)
