Insalata caprese

This simple salad from the southern Italian region of Campania (Caprese means “of Capri”) is made of sliced buffalo mozzarella and tomatoes, and is dressed with basil leaves, salt, black pepper, and extra-virgin olive oil. Variations include adding black olives or using baby mozzarellas and / or cherry tomatoes.
